Bea's Hopping John Salad
Salad we all enjoyed at the Toad Hill Cobra Run

Hoppin’ John Salad w/Molasses Dressing

I have put in () what changes I made.

2 15 oz cans black eyed peas, rinsed and drained. (I used 2 - 15 oz cans of pinto beans in sauce with onions. I didn't drain them).
1 1/2 cups finely chopped celery
1 1/2 cups (2 medium) chopped red and/or green sweet peppers
1 lrg. chopped red/sweet onion
2 medium fresh jalapenos chopped, seeded (optional) (I don’t)
2 Tablespoons snipped fresh parsley...(I used more parsley and I had some cilantro I used)
1 teaspoon salt
2 cloves garlic, minced. (I used way more, as I have the jarred garlic, and I come from the school of no such thing as too much garlic).
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (I used Creole Seasoning Mix. You could also use Tabasco).
1/4 cup cider vinegar
1/4 cup mild flavored molasses
1/4 cup olive oil
6 slices bacon, crisp cooked, drained and crumbled. (I used much more bacon)

1. In a large bowl, combine black eye peas or beans, celery, sweet peppers, onion, jalapenos, parsley, salt, garlic, black pepper, cayenne.

2. For dressing, in a small bowl combine, vinegar, molasses, and oil.  Pour dressing over bean mixture, toss to mix well.. Cover and chill for 24 hours.. Before serving, stir in the crumbled bacon.

Makes 12 servings..

Enjoy!! As you can see I  changed it and you can do the same.  We don't like really spicy stuff, so I always alter that.. Some like it much hotter... My onions were so nice and sweet I was adding it to everything..:-).
